Zucchini Pizza Crust

Ingredients:


2 cups Raw Zucchini, Freshly Grated -- Allow to dry completely before using.
1 Large Egg
1/4 cup Parmesan Cheese, Shredded
1/8 tsp Black Pepper
1/4 cup All-Purpose Flour
2 Cloves Garlic, Pressed or Minced


Directions:


  1. Add  zucchini, egg, cheese, pepper and flour to a large mixing bowl. Mix until all ingredients are combined.
  2. Pour zucchini mixture onto a baking sheet lined with with parchment paper . Using a spatula, spread out the mixture so it forms a round crust (about 9 inches in diameter and 1/8 inches thick).
  3. Bake at 450 degrees, for 15-20 minutes or until edges are golden brown. Flip crust over and bake for an additional 10 minutes. Remove crust and flip back over.
  4. Top pizza with homemade tomato sauce, fresh vegetables, and low fat cheese. Enjoy!
