Southwest Veggie Bowl

Try this Deconstructed Burrito!

Try topping this veggie bowl with homemade salsa! Try either mango or papaya.



2 Tbsp Olive Oil
1 tsp Cumin
1 tsp Paprika
2 cups Cooked Brown Rice
1 (15oz) can Black Beans, Drained and Rinsed
1/2 Medium Red Onion, Chopped
1 Large Carrot, Chopped
1 Large Cucumber, Chopped
1 Ripe  Avocado, Sliced
1/4 cup Parsley, Chopped
Dash Salt and Pepper


  1. Combine olive oil, cumin, and paprika in small bowl.
  2. In a separate large bowl, mix together brown rice, beans, red onion, carrot, cucumber, avocado, and parsley.
  3. Pour in and combine olive oil dressing. Season with salt and pepper. Top with salsa and enjoy!
