Shrimp Fajitas

Ingredients:


1 lb Medium Shrimp, Peeled and Deveined
1 Large Red Bell Pepper
1 Large Orange Bell Pepper
1 Large Green Bell Pepper
1 Medium Onion
2 Tbsp Olive Oil
1 tsp Chili Powder
1/2 tsp Garlic Powder
1/2 tsp Dried Oregano
Juice of 2 Limes
1/2 Cup Chopped Fresh Cilantro
4 Small Corn or Whole Wheat Tortillas
1 Ripe Avocado
1/4 cup Salsa (See Papaya, or Mango)


Directions:


  1. Cut four sheets of foil, about 12-inches long. Divide shrimp and veggies, chopped, into four portions and add to the center of each foil in a single layer.
  2. Add olive oil, spices, and lime juice, and gently toss to combine within the foil. Fold in the sides of the foil, covering completely and sealing the packets closed.
  3. Place foil packets on the grill and cook until just cooked through, about 10-12 minutes. Served immediately with tortillas, salsa, and sliced avocado.
