Mushroom Meatloaf

Substituting HALF the meat with minced mushrooms not only enhances the flavor, but also adds a vitamin packed punch full of vitamin D, riboflavin, selenium, and copper.

Ingredients:


2 lbs Cremini Mushrooms
1 Large Onion, Finely Chopped
1 Tbsp Olive Oil
3 Cloves Garlic, Minced
1 Tbsp Thyme, Fresh (or 2 Tbsp Dried Thyme)
1 cup Panko Breadcrumbs
1 tsp Salt
1/2 tsp Black Pepper
1 lb Turkey Breast (93% lean), Ground
2 Large Eggs, Lightly Beaten
1 cup Diced Tomatoes, Seasoned


Directions:


  1. Preheat oven to 375°.
  2. Place half of the mushrooms in food processor, process until minced. Place in bowl and repeat with remaining mushrooms.
  3. Heat a large skillet over medium-high heat, add oil, and onion. Sauté until glistening. Add garlic, sauté 1 minute. Add mushrooms, and cook for about 7-10 minutes until most of liquid evaporates. Stir in thyme.
  4. Combine mushroom mixture, panko, salt, pepper, turkey, and egg. Mix until well combined. Add to a loaf pan or free form into a loaf on a coated cookie sheet. Bake at 375° for about 20 minutes. Add diced tomatoes to the top, bake an additional 10-15 minutes until fully cooked (160° - internal temperature). Remove from oven and enjoy!
