Ingredients:


2 Large Eggs
1/3 Cup Plain Greek Yogurt
1/2 Cup Shredded Cheddar Cheese
2 Tbsp Grated Parmesan
2 Tbsp Chopped Chives
1 tsp Salt
2 tsp Black Pepper
3 Cups Mashed Potatoes


Directions:


  1. Whisk eggs and then whisk in Greek yogurt. Stir in cheddar, Parmesan, and chives.
  2. Add salt and pepper to potatoes. Add them to the bowl with eggs and cheese. Mix all together well.
  3. Using a cupcake pan, spoon the potatoes into the greased wells, just to the top.
  4. Bake at 400˚ Fahrenheit for 25-35 minutes or until they are golden brown. Remove from pan and allow to cool before serving.
