Blackberry Arugula Citrus Salad

Fresh arugula has a peppery flavor, different than spinach or romaine. Its full of Vitamin A, Vitamin K, and folate, among many other vitamins and minerals.

Ingredients:


Salad:

Baby Arugula Leaves
Fresh Blackberries
Crumbled Gorgonzola, Blue Cheese, or Goat Cheese

Citrus Vinaigrette:

1/4 cup Extra-Virgin Olive Oil
1/4 cup Freshly-Squeezed Orange, Lemon, or Lime Juice
1 tsp Kosher Salt
1/2 tsp Freshly Ground Black Pepper


Directions:


  1. Whisk together all vinaigrette ingredients until well-blended.
  2. Toss with arugula and blackberries, and then serve topped with crumbled cheese.
