BBQ Salmon Burgers

Switch up your usual burger with this tasty salmon version.

Ingredients:


1 lb. Salmon, Wild Caught
1/2 cup Barbecue Sauce, Divided
1/2 cup Panko Bread Crumbs
1 Large Egg
2 Large Green Onions, Minced
1/2 Lime, Juiced
4 Large Romaine or Green Leaf Lettuce Leaves
4 Thin Hamburger Buns, Whole Grain


Directions:


  1. Place salmon in food processor. Pulse 10 to 15 times or until salmon is finely chopped.
  2. Add ¼ cup barbecue sauce, bread crumbs, egg, onions and lime juice. Pulse 5 to 7 times or until ingredients are combined.
  3. Divide mixture and evenly shape into 4 patties.
  4. Heat grill to medium heat. Grill burgers 8 to 10 minutes or until cooked through, about 145°F.
  5. Place burgers on bun bottoms. Top with lettuce leaves and remaining ¼ cup barbecue sauce.

 

Lighten Up Tip: Serve burgers atop chopped romaine lettuce. Serve with tomato and cucumber slices. Drizzle with barbecue sauce.
