Ingredients:


1 Large Baked Potato, Cleaned and Prepped
Toppings to Consider:
Sautéed vegetables
Chili
Black Beans
Salsa
Low-Fat Cheese
Diced Turkey Bacon
Tomatoes
Fresh Broccoli
Onions
Corn
Guacamole
Peppers
Non-Fat Greek Yogurt
Ground Turkey
Feta Cheese
Shredded Carrots
Hard boiled Eggs


Directions:


  1. Bake potatoes using any of the below methods:
    Microwave: Prick the potato several times with a fork. Cook on full power for 5 minutes. Turn over and cook for 5 more minutes. When potato is soft remove from microwave.
    Oven: Prick the potato in a few places with a fork and bake directly on the oven rack or on a foil-lined baking sheet for 50-60 minutes at 425 degrees. Flip potato every 20 minutes. Potatoes are done when soft.
    Crock Pot: Fork potato and wrap tightly in foil. Place in slow cooker and cover. Cook on high for 4-5 hours on or on low for 7 to 8 hours, until soft.
  2. Set out toppings in small, individual dishes. Serve potatoes and let kids get involved by adding their own toppings to their potato.
