Apple Oat Muffins

Ingredients:


1 cup Whole Wheat Flour
1 cup Old-Fashioned Rolled Oats
1 ½ tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Cinnamon
1 tsp Salt
1 Large Egg
1 cup Non-Fat Greek Yogurt, Plain
1/2 cup Applesauce, Unsweetened
1/4 cup Brown Sugar
1 tsp Vanilla Extract
1 Large Apple, Peeled, Cored and Grated
1/2 cup Raisins or Dried Cranberries (optional)


Directions:


  1. Mix flour, oats, baking powder, baking soda, cinnamon, and salt. Set bowl aside.
  2. In a separate bowl beat eggs. Whisk in yogurt, applesauce, brown sugar, vanilla, and grated apple. Stir until well combined.
  3. Add wet ingredients to dry ingredients and mix until well combined. Add raisins.
  4. Divide batter evenly between 12 greased muffin cups. Add a sprinkle of oats to tops, if desired.
  5. Bake at 350 degrees for 20-22 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
